Simple but yummy!

Stumbling across my notes, recipe books and diary I found this quick and easy shortbread recipe scribbled down. This Shortbread is made with only three ingredients, plus is yummy for all the family!

Simple Shortbread

You will need :

  • 2 cups of plain flour
  • ½ a cup of icing sugar
  • 250grams of butter
  • Optional – caster sugar

Preparation Method

  1. Set the oven to 150C
  2. Sieve the sugar and flour together in to a medium sized mixing bowl
  3. Thoroughly mix the sugar and flour together
  4. Cut the butter in to quarters of about 2cm and add to the mixing bowl
  5. Rub in the butter. It should start to look like breadcrumbs
  6. Continue to rub in the butter until it reaches a gooey state.
  7. Grease a small baking tray and line with grease paper
  8. Layer the mixture in to the greased tray and put in the oven, after 5 minutes remove
  9. Then use a fork to poke holes in the mixture and outline the pieces. Continue to poke holes into the mixture until it is covered in holes
  10. Put it back in the oven for 40 minutes or until it is a pale brown colour
  11. Leave it to cool and then serve

Tip of the day – you can even sweeten it up with a dusting of caster sugar
