A little splash of heaven – Forest Fruit Daiquiri

You will need :

  • Muscovado sugar – 4 tbsp
  • Water – 250ml
  • Fresh limes – 2
  • Mixed forest fruits (can be frozen) – 500g
  • Lemonade
  • Rum

Preparation Method

First make a syrup from the muscovado sugar. Add four heaped tablespoons to 250ml of water in a saucepan. Bring to the boil stirring occasionally, then set aside to cool.

Next make the fruit puree. Allow the forest fruits to thaw if necessary, then blitz until smooth. Pass the puree through a sieve to remove seeds and skins. You will need a spoon or a spatula to push the mixture through, and it can take some time.

Add fresh lime juice and sugar syrup to taste. Aim for slightly more sourness than you require in the finished drink. You will be adding sweet lemonade later.

To serve, mix 3 measures puree to 1 measure of rum. You can use white or dark rum, or spiced rum for extra flavour. Top up with two fingers of lemonade.
