Patatas Bravas

You will need:

  • 1 tbsp olive oil
  • 1/2 small onion, chopped
  • 1 garlic clove, chopped
  • 115g can chopped tomatoes
  • 1/2 tbsp tomato purée
  • 1 tsp sweet parprika (pimenton)
  • good pinch chilli powder
  • pinch sugar
  • chopped fresh parsley, to garnish

Preparation Method:

  1. First heat the oil in a pan, add the onion and fry for about 5 minutes until softened. Add the garlic, tomatoes, tomato purée, paprika, chilli powder, sugar and salt and bring to the boil, stirring. Simmer for 10 minutes until pulpy. You should ideally set this sauce aside for up to 24 hours, although an hour or so will do.
  2. To serve, preheat the oven to 200C/gas 6/fan oven 180C. Cut the potatoes into small cubes and pat dry with kitchen paper. Spread over a roasting tin and toss in the oil, then season. Roast for 40-50 minutes, until the potatoes are crisp and golden.
  3. Tip the potatoes into dishes and spoon over the reheated sauce. Sprinkle with the parsley.

    It looks nice, but we don’t bake the potatoes, we deep fry them, and we reduce the sauce to purée. However, it is interesting for a change and I am absolutely sure that it tastes delicious 😀 Now I feel like eating patatas bravas LOL

    loving this recipe! It just might make an appearance in my kitchen so a lazy Sunday brunch. Would go great with a frittata and a big pot of coffe 😀
