Valentines Day Chocolate Whoopie Heart Pies!

I thought what better than little cakes of love :0)

I have written this recipe out in two parts

For the buttercream

You Will Need: – 

  • 2 large egg whites,
  • 330g icing sugar,
  • 80ml water,
  • 0.25 tsp cream of tartar,
  • 28g mini marshmallows,
  •  1 tsp vanilla.
Preparation Method:
  1. Whisk egg whites, sugar, water, cream of tartar in large heatproof bowl.
  2. Place bowl over pan simmering water and stir in marshmallows and stir until melted.

For the Cake

You will need:

  • 250g plain flour,
  • 70g cocoa powder,
  • 1.25 tsp bicarb of soda,
  • 0.5 tsp salt,
  • 100g unsalted butter,
  • 160g dark muscavado sugar,
  • 1 large egg,
  • 1tsp vanilla extract,
  • 300ml buttermilk (well shaken)
Preparation Method:
  1. Whisk together the flour, cocoa, bicarb, and salt until well combined.
  2.  Cream the butter andsugar in a separate bowl until fluffy using electric hand whisk. Add the egg and mix well.
  3. Add vanilla extract and buttermilk and beat until well combined, slowly mix half the dry ingrediants then add the remainder and mix til combined.
  4. Put heaped teaspoons on a baking tray making sure well spaced out and bake for 10-12 mins at 180
  5. Leave to cool, then sandwich together using marshmalow buttercream.
