Spanish Omlette with a twist

You will need:

  • 1 tablesp. olive oil
  • 8 potatoes, cut into small dice
  • 1-2 onions, chopped
  • A handful of mushrooms
  • 1 chopped pepper
  • 100grams ham
  • 6 Quality Assured eggs, whisked in a large bowl
  • 2 -4 tablespoons of grated cheddar cheese
  • A little salt and black pepper

Preparation Method:

  1. Lightly oil a large non-stick pan.
  2. Add the potatoes and cook for 5 minutes.
  3. Add the onions, chopped peppers, mushrooms and hamand continue cooking for another 4-5 minutes.
  4. Add the mixture to the eggs, season and mix well together.
  5. Reheat the pan again with a little oil.
  6. Add the egg mixture.
  7. Cook until the under side is set.
  8. Put a large plate on top of the pan and turn the omelette onto it.
  9. Then slide it back into the pan and cook the other side.
  10. Top with cheese. Cook until cheese is melted.
  11. I like to finish my omlette under the grill.

I had chips and a salsa dip with my omlette
