Soup you sir…. Potato, Carrot and Parsnip Soup

You will need:

  • 1/4 cup butter
  • 2 large onions, halved and sliced
  • 4 carrots, peeled, cut into 1/2-inch pieces
  • 4 parsnips, peeled, cut into 1/2-inch pieces
  • Chicken broth
  • 3 large potatoes, cut into 1/2-inch pieces
  • pinch of chopped fresh parsley
  • 1 tsp fresh thyme
  • 1 1/4 cups milk
  • 1/4 cup dry white wine

Preparation Method:

  1. Melt butter in heavy large pot over medium-high heat.
  2. Add onions and sauté until golden, about 15 minutes.
  3. Add carrots and parsnips and cook 10 minutes.
  4. Add broth, potatoes, parsley and thyme. Cover and simmer until potatoes are tender, stirring occasionally, about 30 minutes
  5. Puree half of soup in processor. Mix puree into remaining soup in pot. Stir in milk and dry white wine. Season to taste with salt and pepper.

Simmer the soup when ready to eat and enjoy :0)
