A Sugary Treat….

Yesterday I went to the launch of Tate and Lyle Sugar’s new Fairtrade Beverage Syrups range. I was able to sample the syrups in Lattes and also sodas. They have three new flavours which are available now – Vanilla, Caramel and Hazelnut. Tate & Lyle have created recipes to show how the products can be used. Today I received a beautiful hamper with the syrups in to test the recipes for myself, I can’t wait to try them out!



Bonfire Cupcakes

You Will Need:

  • ½tbsp lemon juice or vinegar
  • 110ml (4fl oz) full-fat milk 
  • 110g (4oz) plain flour 
  • ½tsp bicarbonate of soda 
  • 25g (1oz) cocoa powder 
  • 55g (2oz) unsalted butter 
  • 125g (4½oz) caster sugar 
  • 1 large egg For the icing 
  • 110g (4oz) unsalted butter
  • 110g (4oz) cream cheese 
  • 450g (1lb) icing sugar 
  • 1tsp vanilla essence 
  • 1tsp red colouring paste 
  • 4 boxes of Matchmakers

Preparation Method:

  1. Preheat the oven to 180°C/gas 4. Line a 12-hole nonstick muffin tray with paper cake
  2. Add the lemon or vinegar to the milk and set it to one side to allow the milk to curdle.
  3. Sift the flour, bicarbonate of soda and cocoa in a bowl and set aside.
  4. Beat the butter and half the sugar together in a large bowl until pale and creamy.
  5. Add the egg, followed by the rest of the sugar.
  6. Follow this with a third of the cocoa mixture, then a third of the soured milk; keep alternating till you have used up all the mixtures.
  7. Divide the mixture between the cases.
  8. Place in the oven and bake for 20-25 minutes until firm and springy to the touch.
  9. Remove to a wire rack and leave to cool.
  10. To make the icing, beat together the butter and cream cheese until smooth. Add the icing sugar, a third at a time, and continue to mix, adding the vanilla and then the red food colouring to achieve a strong red colour.
  11. Turn the cupcakes upside down and remove their paper cases.
  12. Using a butter knife cover the cakes (still upside down) in red icing.
  13. While the icing is still soft, press in the ‘logs’ (Matchmakers), which you can break into smaller pieces to fit.
  14. Some should be higher than the cake and you can use the shorter pieces to fill in the gaps.
